The crisp, soft, fresh, and refreshing red clover microgreen…as much as it can be added to sandwiches and salads, it can also make a salad on its own! You will appreciate its crunchiness and sweetness. Several alfalfa lovers have switched to clover because it’s even more on the crispy side. But it’s a matter of opinion…and taste! Try it for yourself!

What you will want to know

While it may come as a surprise that the red clover microgreen is green, what is not surprising is that it is bursting with vitamins and nutrients, especially vitamins A, B, C, E, and K as well as calcium, iron, magnesium, phosphorus, potassium, zinc, beta-carotene and amino acids. The red clover microgreen will even provide you with protein. Its healing properties are also very interesting. A member of the legume family (such as peas and beans, among others), clover contains isoflavones that act as phytoestrogens (produced by plants and similar to the female hormone, estrogen). Not to say that men should not consume it, but it has properties that are particularly interesting for women. It is also interesting to know that Chinese medicine has long used clover in teas as an expectorant. Russians recommend clover to treat asthma, and are used topically to attack psoriasis and scarring, among other things.

Conservation
The red clover microgreen requires very little water. Don’t drown her. Eat it or put it in the trays in the fridge when it is more or less 5 cm. The cold will slow growth until you eat it. If you cut it, keep it in the refrigerator for two or three days maximum.

Growth
Red clover microgreens should be eaten, refrigerated, or cut when they reach around 5 cm. To keep them in the fridge, you will want to either leave them on potting soil (slide the whole tray in the refrigerator) or cut them and place them in a plastic bag. For the latter option, they will only keep for two or three days at most.
