What you will want to know
The adult radish, when eaten, is stuffed with water, which gives it its freshness. However, all this water ‘dilutes’ its nutrient supply. This is what makes the radish microgreens so great. they have the same great taste of radishes – even multiplied – but they also have a much higher concentration of vitamins and minerals. The radish microgreen is full of vitamin C, fiber and carbohydrates while containing vitamins A, B, E and K. Its contribution in folic acid, manganese, copper, phosphorus, sodium, niacin and zinc is also considerable. Your radish microgreens will also provide you with amino acids, antioxidants and beta-carotene. But honestly, you will eat them mainly because they are delicious!
Keep the microgreens on slightly moist soil. Eat them or put the trays in the fridge when they are more or less 10 cm. The cold will slow growth until you eat it. If you cut them, keep them in the refrigerator for two or three days maximum.
Daïkon radish microgreens will be ready to eat between 3 and 5 days after sowing. If you are able to resist and do not eat them all at once, you will want to keep them in the fridge as soon as they reach around 10 cm. At that time, you can keep them in the fridge in plastic bags for two or three days or by dragging the entire tray in the refrigerator.
